Ingredients:
- 2 cups spinach
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup green olives, sliced
- 1/4 cup almonds, chopped
- 1/4 cup vegan feta cheese, crumbled
- Dash of vinegar
- Pink Himalayan salt, to taste
- Black pepper, to taste
- Garlic powder, to taste
- Pinch of cayenne pepper
Instructions:
1. In a large bowl, combine the spinach, cherry tomatoes, cucumber slices, red onion slices, sliced green olives, chopped almonds, and crumbled vegan feta cheese.
2. Drizzle a dash of vinegar over the salad ingredients.
3. Season with pink Himalayan salt, black pepper, garlic powder, and a pinch of cayenne pepper, adjusting to taste preferences.
4. Toss the salad gently to coat all ingredients evenly with the seasonings.

Romaine Lettuce and Pecan Salad
Ingredients:
- 1 head Romaine Lettuce
- 1/2 onion, thinly sliced
- 1 cup pecans, roughly chopped
- 1/2 cup raisins
- 1 apple, diced
Dressing:
- 1/4 cup Karo Syrup
- 2 tablespoons white vinegar
- 1 tablespoon dijon mustard
- Juice of 1 fresh lemon
- Salt and pepper to taste
Instructions:
1. Wash the romaine lettuce thoroughly and chop it into bite-sized pieces.
2. Thinly slice the onion and dice the apple.
3. In a small bowl, whisk together the Karo Syrup, white vinegar, dijon mustard, fresh lemon juice, salt, and pepper to taste to create the dressing.
4. In a large salad bowl, toss together the chopped romaine lettuce, sliced onions, chopped pecans, raisins, and diced apples.
5. Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.

Raw Version
Ingredients:
For the walnut meat:
- 1 1/2 cups raw walnuts
- 1 tablespoon soy sauce or tamari
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt to taste
For the toppings:
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded lettuce
- 1/4 cup chopped cilantro
- 8 large lettuce leaves (such as romaine or butter lettuce)
For the sauce:
- 1/2 cup vegan sour cream or yogurt
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- Salt to taste
Instructions:
1. In a food processor, pulse the raw walnuts until they reach a crumbly texture, resembling ground meat.
2. Transfer the walnut meat to a bowl and stir in soy sauce or tamari, chili powder, ground cumin, garlic powder, onion powder, and salt to taste. Mix well to combine.
3. Use large lettuce leaves as taco shells.

For the stir-fry:
- 2 bell peppers (assorted colors), sliced
- 1 medium onion, sliced
- 2 tablespoons soy sauce or tamari
- 1 tablespoon sesame oil
- Cooked basmati rice, for serving
- Optional garnishes: sliced green onions, sesame seeds
Instructions:
1. Prepare the tofu: In a bowl, mix together soy sauce, rice vinegar, maple syrup, sesame oil, minced garlic, and minced ginger. Add the cubed tofu and toss gently to coat. Let marinate for at least 15-20 minutes.
2. After marinating, sprinkle cornstarch over the tofu and toss gently to coat.
3. Heat grapeseed oil in a large skillet or wok over medium-high heat. Add the tofu cubes in a single layer and cook until golden and crispy on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside.
4. In the same skillet, add a little more oil if needed. Add the sliced bell pepper and, onion. Stir-fry for 4-5 minutes, until the vegetables are tender-crisp.
5. Return the tofu to the skillet with the vegetables. Add soy sauce, and sesame oil. Stir-fry for another 2-3 minutes, until everything is heated through and well combined.
6. Serve the tofu stir-fry hot over cooked basmati rice. Garnish with sliced green onions and sesame seeds, if desired.

- 1 cup raw almonds
- 1 can pinto or red kidney beans
- 1/2 teaspoon chili powder

- 1 teaspoon apple cider vinegar
- Pinch of sea salt
- Black pepper
Ingredients for Salad:
- Spinach, chopped

Instructions:
1. Pulse the almonds in a food processor until they are well chopped but not fine like flour.
2. Add the remaining ingredients and blend until chunky but not like paste.
3. Adjust salt to taste.
4. Heat in a skillet or serve as is.
5. Mix with salad ingredients or use for tacos, burritos, or any other dish you like!
6. Enjoy your delicious and nutritious almond nut meat!

- 1 cup chopped pineapple
- 1 ripe banana
- 1 medium-sized apple, cored and chopped
- 1 cup water or coconut water (adjust for desired consistency)

1. Wash the spinach leaves thoroughly and place them in a blender.
2. Add the chopped pineapple, banana, and apple to the blender.
3. Pour in the water or coconut water.
4. If desired, add a few ice cubes for a colder smoothie.
5. Blend all the ingredients until smooth and creamy. If needed, scrape down the sides of the blender and blend again to ensure everything is well combined.
6. Taste the smoothie and adjust the sweetness or thickness by adding more fruit or liquid as desired.

- Fresh Spinach
- Fresh Broccoli Florets
- Cherry Tomatoes
- Julienne Carrots
- Red Onion
- Apples (your choice)
- Apple Cider Vinegar
- Fresh Lemon Juice
- Seasonings
Instructions:
1. Rinse Kidney Beans.
2. Place spinach in sink in strainer.
3. Heat water in tea kettle or on stove until it's hot, then pour over spinach to wilt it (if you prefer it wilted).
4. Cut broccoli florets into small pieces, including the stems (cut them into small pieces).
5. Cut apples into bite-sized chunks.
6. Thinly slice red onions.
7. Place all ingredients in a salad dish.
8. Pour in a capful of apple cider vinegar, fresh lemon juice, and dijon mustard.
9. Sprinkle on desired seasonings.
10. Mix well and ENJOY! Remember, I don't measure anything, so use your own judgment! Lol!
